200g plain flour
1 tsp baking powder
2 tsp ground turmeric
2 large eggs
1 ripe banana
300ml milk
1 tbsp honey
butter or oil to cook
a selection of your favourite fresh fruit, nut butter and Greek yoghurt to serve
Place the flour, baking powder and ground turmeric in a large bowl and mix well
Add the banana, eggs, honey and milk to a blender or NutriBullet and blend together
Gently add the dry ingredients to the blender and pulse again until fully combined
Allow the pancake mixture to rest for 30 minutes
Gently heat a small amount of butter or oil in a large frying pan
Add approximately a tablespoon of the pancake mix to the pan and cook for around 2 minutes then flip using a wide spatula and heat for a further minute or two until fully cooked
Remove from the pan and repeat until the pancake mixture is used up
Top with fresh fruit, Greek yoghurt and nut butter and serve immediately
